Due to its long history as a food crop in North-East Asia, farmers have become adept at growing soy and over generations it has been selected for properties suited to the foods it is used in. In more recent times, programs of both traditional and new plant breeding techniques are being applied to select for specific properties, such as optimum protein or fat content and resistance to disease.
